Clean Greek Salad

Last week we completed the first round of the 10 Day Program and it was such a success!! It was inspiring to see everyone's commitment to trying a new way of clean eating, while taking their body's detoxing abilities, deeper.  The mini community that was built in the Facebook group really made the experience. (thank you guys!)

During the 10 Days we ate from a range of smoothies, shakes, soups and delicious clean green meals. One of my go-to's during the process (and in general) is a Greek Salad. There is nothing quite as delicious as those savory Mediterranean flavors mixed together.

I wanted to share my light and cleanse friendly version, perfect as a side dish or a quick lunch to bring to work:

Serves 2

Ingredients:

  • 1 head of romaine lettuce
  • Handful of spinach
  • 1/2 red onion
  • 1/4-1/2 cucumber
  • 1/2 cup cherry tomatoes 
  • 6-10 Kalamata Olives
  • 1/2 Cup quinoa
  • 1/2 can garbanzo beans
  • 1/2 avocado
  • 2 tbsp Primal Greek Dressing (w/avocado oil) or Homemade greek vinaigrette 
  • Optional: Peperoncinis 

Method:

Cook your quinoa. (stovetop of quick microwave bags from TJ's)

While it's cooking, lay down a bed of chopped greens. I mix romaine with spinach to allow some green variety.

Chop the rest of your vegetable ingredients separately and place on greens into sections (see photo).

For extra flavor and some warmth, I sauté the garbanzo beans to make them crispy and seasoned. Heat a sauce pan with 1 tbsp of Olive Oil.

Add the beans then coat in greek inspired herbs and seasoning (oregano, onion, garlic, chive) with dash of fresh lemon juice.  Start cooking on medium to high heat until they start browning and get a little crispy. 

For NON vegan/cleanse friendly version:

You may also add Feta Cheese, Lemon pepper chicken, or whatever your heart desires for some extra flavors.
