Mint Chip Smoothie Bowl

It's easy to get sick of our morning smoothies when we are always blending the same ingredients over and over. All it takes is a couple new additions to make a big difference in flavor and texture!

I was inspired to try this one out after having lunch at the almighty Cafe Gratitude (best vegan joint in Southern California for sure) and my sister tried their mint chip smoothie, listed as "I AM COOL" that literally tasted like ice cream. I remembered I had some left over mint leaves at home and knew I had to make it happen.

This smoothie packs in quality greens which are potent natural detoxifiers that help to oxygenate the blood while supporting the clearing pathways of the body. Plus there is a good serving of plant protein to make this the perfect post workout treat.

Recipe 

Ingredients (serves 1):

  • 1  ripe banana, frozen! (key for thick consistency)
  • 1  handful spinach
  • 2 Tsp any greens powder or spirulina (I used Vital Greens by Health Force)
  • 1 - 2 cups unsweetened nut milk
  • 1/2 scoop vanilla plant protein powder (I use VEGA)
  • About 10+ mint leaves (or 1-2 drops peppermint extract)
  • 2 Tbsp raw cacao nibs
  • Few Ice cubes
  • Optional: 1 Tbsp almond butter

TOPPINGS (optional)

  • Cacao nibs
  • Coconut Shreds
  • Mint leaves

Method:

Blend smoothie ingredients in a high powered blender until smooth.

For thicker consistency, use less liquid.
