Simple Stir Fry

There's a reason many of the Asian cultures maintain a slender figure: they're not scared of carbs, they're not obsessed with getting enough protein and they incorporate more fresh food. 

Many times when we think of stir fry we think of Panda Express or some greasy take out. The problem with many of those "fast food" stir fries is they use GMOs, many high sodium sauces, and LOTS of cooking oil that will up your calories through the roof. 

If you cut the crap and add in the goods, it's actually a very light and nutrition packed meal.

This recipe is a quick staple in my home. It can be made with rice, quinoa, buckwheat noodles, or traditional stir fry noodles.

Let's begin:

First chop up all your favorite vegetables into desired shape.

Saute 1/2 an onion and a few garlic cloves on large stir fry pan with 1 Tbsp of coconut oil

Add in vegetables. If it needs extra moisture, use vegetable broth instead of cooking oil.

Once everything starts to soften, add in your homemade Stir Fry Sauce. 

Half cook the noodles and add them to your stir fry (they will finish cooking in the pan, you don't want them to be sticky and overcooked).

FULL RECIPE (serves 2-3)

INGREDIENTS:

  • 1 red bell pepper
  • 1/2 onion
  • 1/4 red cabbage
  • 1 cup green beans
  • 1-2 zucchinis
  • 1 cup mushrooms
  • 1/2 cup edamame
  • Organic Firm Tofu or Organic Chicken 
  • 1 Tbsp Coconut Oil
  • 2 cloves garlic
  • *Optional: Sesame Seed topping

Sauce:

  • 2 cloves garlic.
  • 1 tablespoon fresh ginger.
  • 1 tablespoon honey (more to taste)
  • 1/4 cup Braggs Liquid Aminos (or soy sauce)
  • 2 Tbsp veggie broth
  • 2 Tbsp rice wine vinegar.

INSTRUCTIONS

Chop up all your favorite vegetables into desired size, keeping them consistent. Saute 1/2 an onion and a few garlic cloves on large stir fry pan with 1 Tbsp of coconut oil. Add in vegetables. If it needs extra moisture, use vegetable broth instead of cooking oil. Cook your choice of protein separately. Once vegetables start to soften and protein is cooked, combine ingredients and add in your desired amount of homemade Stir Fry Sauce. Follow cooking instructions for the noodles and add them to your stir fry (be sure not to overcook, these suckers get super sticky!)
