We hear all about the glorious sweet potato, but unless its holiday season we are not always sure what to do with it. 

Homemade burgers and patties are the best because you know exactly what is going in them (no mystery ingredients). 

I always say eat from a rainbow of color, so this recipe adds in nutrient packed ingredients and healing spices. 

Serving Size:

About 10 patties

  • 2 sweet potatoes
  • 1/2 yellow onion
  • 1/2 red onion
  • 1 bell pepper
  • 1 handful chopped cilantro
  • 2 eggs (can leave this out for vegan version)
  • 1/2 cup cooked brown rice
  • 3 garlic cloves
  • Turmeric
  • Paprika
  • Cumin
  • Salt + Pepper to taste

 

Method:

Chop the sweet potatoes into chunks and plunge into a pot of boiling water for about 20 minutes or until softened.

Book your brown rice (1/4 cup dry). 

In the meantime, sauté the onion and garlic in 1 tsp of olive or coconut oil. Once softened add in the bell pepper and cilantro. 

Once sweet potato chunks are softened, drain then combine this saute with the potatoes and brown rice into a large mixing bowl. 

 

Once you have mushed it up the best you can, add in the eggs and all the spices. 

Consider this to be your "ground beef " alternative. Use your hands to build the patties to your desired thickness, then sautee on a pan or bake in the over at 350 degrees for 30 minutes. Voila! 

You can eat these on their own, over a bed of greens, or in between lettuce buns. Doesn't matter because they are delicious with everything!

Pro Tip: add hot sauce.
